In Meraki MDM, can we record an Asset ID for an iOS device?

A great place to record this is in the Note field in the device record. You may also want to use the Name field. In fact, if you're setting the Name of the device back in Apple Configurator (for devices not in the Device Enrolment Program), that Name field (in SM) pulls the device name in.
